Zucchini Boats

SHARE

Zucchini boats are a fun way to eat your veggies.

Zucchinis, while nutritious, aren’t known for packing a lot of flavor on their own.

That’s why we like to stuff them with a tasty buffalo chicken filling that is the true star of the show.

We take fresh zucchini, scoop out the zucchini flesh and saute ground chicken.

Add Primal Kitchen’s Buffalo Sauce (or another preferred buffalo sauce; although no other is as clean) to the chicken, stuff the boats, top with cheese, and bake.

We add a healthier version of ranch dressing to the top once cooked using greek yogurt for extra flavor and protein!

Simple and healthy recipes help us get through the week without staring into the refrigerator abyss wondering what to make for dinner every night. This can become an unnecessary mental load. We recommend browsing through our website for recipe ideas like this to set you up for success this week.

These zucchini boats also meal prep well and can be enjoyed for lunch or dinner all week long.

Enjoy!
