One of the best things you can do with leftover chicken (in our humble opinion) is make buffalo chicken salad!
Combine cooked chicken with crunchy elements, a creamy sauce (we love Primal Kitchen Buffalo Sauce) and you have a protein-packed, quick, delicious lunch.
Admittedly, this recipe is for spice lovers but you can tweak the amount of buffalo sauce you add in to cater to your taste.
Lunches like this are great to make on a Sunday night and meal prep so you can eat it throughout the week. These go well in lettuce wraps, on a piece of toast, or just by itself.
If you’re thinking of trying this recipe, we have a discount code on Primal Kitchen products (like the buffalo sauce we use here) that takes 10% off your order when you use code INSIDER10.
This buffalo chicken salad recipe is so satisfying. We hope you enjoy!
