Buffalo Chicken Salad (5-Minute Prep)
One of the best things you can do with leftover chicken (in our humble opinion) is make buffalo chicken salad!
Combine cooked chicken with crunchy elements, a creamy sauce (we love Primal Kitchen Buffalo Sauce) and you have a protein-packed, quick, delicious lunch.
Admittedly, this recipe is for spice lovers but you can tweak the amount of buffalo sauce you add in to cater to your taste.
Lunches like this are great to make on a Sunday night and meal prep so you can eat it throughout the week. These go well in lettuce wraps, on a piece of toast, or just by itself.

Buffalo Chicken Salad
Ingredients
- 2 Chicken breasts
- 3 Celery stalks
- Salt and pepper to taste
- ¾ cup Buffalo sauce
- ½ cup mayonnaise
- *Optional toppings of red onion and avocado
Instructions
- Cook chicken breasts in boiling water until the internal temperature reads 165°F or cooked through.
- Once cooled, shred the chicken with forks or stand mixer.
- Add in salt and pepper.
- Add in chopped celery.
- Add in Primal Kitchen’s buffalo sauce.
- Add in mayonnaise.
- Mix thoroughly until combined.
