Ingredients
  

  • 2 plums
  • 2 peaches/nectarines
  • 1-2 cups arugula
  • ½ of a medium red onion, diced
  • ¼ cup feta/goat/crumbly cheese (can sub dairy-free)
  • ¼ cup toasted and chopped hazelnuts (or nut of choice)

Dressing:

  • 2 tbsp olive oil
  • 1.5 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions
 

  • Wash and finely dice the stone fruit.
  • Dice the red onion.
  • In a separate cup or dish, whisk olive oil and balsamic vinegar well.
  • Lay out washed and dried arugula.
  • Top with diced stone fruit, nuts, and cheese.
  • Top with dressing and salt and pepper to taste.
