Ingredients
  

  • 1 corn tortilla
  • 2 tbsp extra virgin Olive Oil (we used La Tourangelle)
  • 2 eggs (or egg whites)
  • 1 tbsp Non-fat Greek Yogurt
  • 2 tbsp Chopped tomato

Optional toppings:

  • Cilantro (to taste)
  • Avocado
  • Salsa (or hot sauce)
  • Shredded Cheese (optional)

Instructions
 

  • Add olive oil to a pan and place on high heat.
  • Cut corn tortilla into 1-inch pieces and add to the pan.
  • Once you see browning on the edges, Flip the tortilla pieces over.
  • Stir greek yogurt into eggs and then add the egg mixture to the pan with the corn tortillas.
  • Top with tomatoes, cilantro, salsa (or hot sauce), and shredded cheese (optional).
