- 1 corn tortilla
- 2 tbsp extra virgin Olive Oil (we used La Tourangelle)
- 2 eggs (or egg whites)
- 1 tbsp Non-fat Greek Yogurt
- 2 tbsp Chopped tomato
Optional toppings:
- Cilantro (to taste)
- Avocado
- Salsa (or hot sauce)
- Shredded Cheese (optional)
Add olive oil to a pan and place on high heat.
Cut corn tortilla into 1-inch pieces and add to the pan.
Once you see browning on the edges, Flip the tortilla pieces over.
Stir greek yogurt into eggs and then add the egg mixture to the pan with the corn tortillas.
Top with tomatoes, cilantro, salsa (or hot sauce), and shredded cheese (optional).
