Egg Bites

Egg bites are a quick, high-protein, on-the-go breakfast for the whole family!

Ingredients
  

  • 1 dozen eggs
  • ½ cup shredded cheddar cheese (or cheese of choice)
  • 1 cup frozen veggie medley (defrosted and strained)
  • salt and pepper to taste
  • 3-4 tsp pesto (optional)

Instructions
 

  • Preheat oven to 350℉
  • Beat 12 eggs until combined
    beating 12 eggs in a bowl
  • Add cheese, veggie medley, salt, and pepper and mix until well combined
  • Line muffin tin with 12 muffin liners
    adding muffin liners to the tin
  • Spoon the mixture evenly into the prepared liners
    adding eg mixture into muffin liners
  • Optional: add a small dollop of pesto to the top and swirl with a toothpick
    adding dollops of pesto into muffin liners
  • Bake for 20 minutes or until cooked through
    cooked egg bites

Notes

These will naturally collapse after they start cooling. You can add 1 tsp. of baking soda and 2 Tbsp of flour to the egg mixture to keep these fluffy. This will, however, alter the nutritional info provided and disqualify these egg bites from being gluten free.
