Zucchini Boats Recipe
Zucchini boats are a healthy main dish made from stuffing scooped out zucchinis with delicious buffalo chicken filling and topped with a ranch dressing. We make a few healthy swaps like using Primal Kitchen’s Buffalo Sauce and Greek yogurt in the ranch dressing for a less caloric, more nutrient-dense meal.

1 medium zucchini 1 lb ground chicken ½ cup Primal Kitchen’s Buffalo Sauce 1 cup cheddar cheese ¼ cup nonfat plain greek yogurt 1/2 tbsp ranch seasoning blend
Preheat oven to 400F.
Cut zucchini in half lengthwise and remove the zucchini flesh with a spoon.
In a pan, cook chicken on medium heat until no longer pink.
Add in Primal Kitchen’s Buffalo Sauce and mix.
Place zucchini boats in a greased 9x13 baking dish.
Stuff zucchini boats with chicken.
Top them with cheese.
Cover your dish with foil and cook for 30 minutes.
While zucchinis are cooking, add greek yogurt and ranch seasoning blend to a bowl. Mix thoroughly.
Remove foil from dish and drizzle with ranch ‘dressing’.
Any buffalo sauce can be used but we highly recommend Primal Kitchen’s for the cleanest option.
You can additionally garnish these boats with green onion and/or blue cheese crumbles.
You can substitute ground chicken for ground beef or turkey.
