Zucchini boats are a fun way to eat your veggies.
Zucchinis, while nutritious, aren’t known for packing a lot of flavor on their own.
That’s why we like to stuff them with a tasty buffalo chicken filling that is the true star of the show.
We take fresh zucchini, scoop out the zucchini flesh and saute ground chicken.
Add Primal Kitchen’s Buffalo Sauce (or another preferred buffalo sauce; although no other is as clean) to the chicken, stuff the boats, top with cheese, and bake.
We add a healthier version of ranch dressing to the top once cooked using greek yogurt for extra flavor and protein!

Zucchini Boats Recipe
Ingredients
- 1 medium zucchini
- 1 lb ground chicken
- ½ cup Primal Kitchen’s Buffalo Sauce
- 1 cup cheddar cheese
- ¼ cup nonfat plain greek yogurt
- 1/2 tbsp ranch seasoning blend
Instructions
- Preheat oven to 400F.
- Cut zucchini in half lengthwise and remove the zucchini flesh with a spoon.
- In a pan, cook chicken on medium heat until no longer pink.
- Add in Primal Kitchen’s Buffalo Sauce and mix.
- Place zucchini boats in a greased 9×13 baking dish.
- Stuff zucchini boats with chicken.
- Top them with cheese.
- Cover your dish with foil and cook for 30 minutes.
- While zucchinis are cooking, add greek yogurt and ranch seasoning blend to a bowl. Mix thoroughly.
- Remove foil from dish and drizzle with ranch ‘dressing’.
Notes
- Any buffalo sauce can be used but we highly recommend Primal Kitchen’s for the cleanest option.
- You can additionally garnish these boats with green onion and/or blue cheese crumbles.
- You can substitute ground chicken for ground beef or turkey.
