Blueberry Bars

These blueberry bars are a perfect breakfast go-to. This recipe is naturally sweetened with dates and honey while the blueberries offer a deliciously subtle fruity flavor. Ingredients
  

  • 1 cup blueberries

  • ¼ tsp salt

  • 2 tbsp coconut oil

  • ½ tsp vanilla
  • 1 egg

  • Preheat the oven to 350 F.

  • Add pecans to the food processor until fine. Remove them to a bowl for later.

  • Add coconut oil, honey, vanilla, and egg. Pulse until mixture starts to come together.

  • Add the remaining ¾ cup of oats and pulse to mix.

  • Add the blueberries and pulse. The mixture will be purple in areas but should still have some whole berries remaining.

  • Pour the mixture into the pan and press down to spread evenly.

  • Sprinkle the chopped nuts and press lightly into the mixture.

  • Bake for 20-25 minutes or until starting to brown around the edges.
  • Let cool completely before cutting into rectangles or squares.
