Blueberry Bars
These blueberry bars are a perfect breakfast go-to. This recipe is naturally sweetened with dates and honey while the blueberries offer a deliciously subtle fruity flavor. And all of this is made with a blender, so there's no mess! Make batches of these bars over the weekend and your Monday morning self will thank you.

1 cup blueberries ⅓ cup pecans 1 ¾ cup oats ½ cup almond flour ¼ tsp salt ½ cup dates 2 tbsp coconut oil 2 tbsp honey ½ tsp vanilla 1 egg
Preheat the oven to 350 F.
Line a 6 x 6 baking pan with parchment paper.
Add pecans to the food processor until fine. Remove them to a bowl for later.
Add 1 cup of oats to the food processor until a flour-like consistency.
Add almond flour and salt and pulse to mix.
Add dates until roughly chopped.
Add coconut oil, honey, vanilla, and egg. Pulse until mixture starts to come together.
Add the remaining ¾ cup of oats and pulse to mix.
Add the blueberries and pulse. The mixture will be purple in areas but should still have some whole berries remaining.
Pour the mixture into the pan and press down to spread evenly.
Sprinkle the chopped nuts and press lightly into the mixture.
Bake for 20-25 minutes or until starting to brown around the edges.
Let cool completely before cutting into rectangles or squares.
