½cupSemi-sweet Chocolate chips(we're using Hu Baking Chocolate Chips No Sugar Added Semi-Sweet)
1tbspChia seeds
Instructions
Peel 2 ripe bananas and place them on a tray, baking sheet, or plate that will fit in your freezer.
Cover with parchment paper or wax paper, and use the bottom of a glass to mash into a flat layer.
Sprinkle chia seeds over the top.
Microwave peanut butter in a microwave-safe bowl until runny (15-30 seconds) and pour over the banana mash.
Add the coconut oil and semi-sweet chocolate chips to a microwave-safe bowl and microwave chocolate chips until runny (15-30 seconds at a time, stirring after each time) and completely melted.
Pour over the peanut butter layer, and watch out for excess chocolate drip.
Sprinkle coconut on top and freeze for 40 minutes or more, until frozen solid and you see a hard chocolate shell.
Break or cut into pieces and enjoy now or keep in a freezer-safe storage container.
