- 2 medium sweet potatoes
- 2 tbsp primal kitchen olive oil
- ¼ cup parmesan cheese
- 1 tbsp dried rosemary
- salt and pepper to taste
Pierce each sweet potato with a fork + microwave or boil until semi-soft, flipping and repeating
Slice into rounds
Lay flat on a baking sheet or air fryer basket
Smash using a glass or fork (oil the bottom of the glass so it doesn’t stick)
Sprinkle with parmesan cheese, rosemary, salt and pepper
Broil for 15-20 minutes
