Ingredients
  

  • 2 medium sweet potatoes
  • 2 tbsp primal kitchen olive oil
  • ¼ cup parmesan cheese
  • 1 tbsp dried rosemary
  • salt and pepper to taste

Instructions
 

  • Pierce each sweet potato with a fork + microwave or boil until semi-soft, flipping and repeating
  • Slice into rounds
  • Lay flat on a baking sheet or air fryer basket
  • Smash using a glass or fork (oil the bottom of the glass so it doesn’t stick)
  • Sprinkle with parmesan cheese, rosemary, salt and pepper
  • Broil for 15-20 minutes
