- ½ of a mini watermelon or ¼ of a large watermelon
- ¼ cup of crumbled feta cheese
- 1 Juice of 1 lime or 1-2 Tbsp of bottled lime juice
- 2 sprigs of fresh mint (leaves only), cut into fine ribbons
Cut a mini watermelon in half or a large watermelon in quarters
Reserve the other ½ or ¾ for later use
Remove the outer rind of the mini half or large quarter and dice into cubes or rectangles and place in a large bowl
Cut feta cheese into small crumbles, add to bowl
Cut fresh mint into tiny ribbons (referred to as chiffonade in the culinary world) and add to bowl
Juice one lime into the bowl
Give a good mix and enjoy!
