Ingredients
  

  • ½ of a mini watermelon or ¼ of a large watermelon
  • ¼ cup of crumbled feta cheese
  • 1 Juice of 1 lime or 1-2 Tbsp of bottled lime juice
  • 2 sprigs of fresh mint (leaves only), cut into fine ribbons

  • Cut a mini watermelon in half or a large watermelon in quarters

  • Reserve the other ½  or ¾ for later use
  • Remove the outer rind of the mini half or large quarter and dice into cubes or rectangles and place in a large bowl
