  • 5 eggs
  • ¾ cup nonfat plain greek yogurt
  • ½ cup olive oil
  • 2 tsp vanilla extract

  • 2 cups oat flour
  • 1 cup cocoa powder
  • cup monk fruit
  • 2 tsp baking powder
  • Dash of salt

  • Preheat the oven to 350 F.
  • Add wet ingredients to a large mixing bowl and mix.

  • Pour batter into a previously greased cake pan. You can use either 2 round 9 inch pans or one 13x9 inch pan

  • Bake for 45 minutes or until a toothpick inserted comes out clean.
