Ingredients
  

  • 1 package of Medjool dates (about 20)
  • 5 tbsp of almond butter (or nut butter of choice)
  • 40 Raw or roasted almonds (or nuts of choice)
  • cups chocolate chips (we used dairy free)

  • Melt chocolate until smooth. Melt in a microwave-safe glass bowl in 30 seconds increments, stirring well each time. Be cautious not to burn.

  • Once chocolate is melted, set aside
  • Prep your dates. Using a scissor, cut open each date carefully and remove pit. We are going to close them up once stuffed, so try to keep at least one end of the date intact.

  • Once pits are removed, stuff each date with a little almond butter. About ¼-½ tsp depending on the size of the date. You do not want to overstuff these or it will be messy!

  • Once stuffed with almond butter, add in your almonds or nut of choice and close the date as best as you can.
  • Your melted chocolate will now be mostly cooled and easier to work with. Coat each date in chocolate and place on parchment paper.

  • Refrigerate for at least 30 minutes but ideally closer to 1 hour for a delicious snack!

Notes

  1. If you are allergic to tree nuts or peanuts, you can stuff these with tahini and they are just as delicious! 
  2. These can be made with any chocolate, nut butter, or nuts of your choosing. 
  3. For a salty and sweet bite, use salted nuts or top with flaky salt before the chocolate sets.
